Ingredients
- 1 kg (2.2 pounds) Vine tomatoes
- 1 bunch of Coriander
- 3-4 Jalapeños (mild but you can add more if you want more spicy sauce)
- 1/4 Onion
- 2 cloves of Garlic
- Salt to taste
- Needed Grill-pan
- Molcajete (large mortar)
Delicious with lean meat, chicken and fish
Directions
- Cut the tomatoes in 3 pieces and take out the heart.
- Heat up a grill pan. Grill the jalapeños and tomatoes each side for 3-4 minutes.
- Grab a mortar.
Put some salt in the mortar, add the garlic and crush it fine. - Then add the jalapeños and crush them fine too.
- Finally add the coriander and crush it too. Now you have a wonderfully smelling green paste.
- Then add the tomatoes and crush them coarse or fine, ast you like.
- Store the salsa in the fridge.
